Flan de queso

 Flan de Queso 

    
    It one of my favorite desserts of all time, I love making desserts but this dessert is one of the hardest ones that I have tried to make. First my Sugar was not melting the way it had to melt second my mix was not coming out and the flan never cooked well. So I gave up to then find out that flan was actually cooked in what spanish people call a bano de maria.  A bano de maria is when we fill up one deep pan or container of water then we have a smaller container fill if the flan and we will place this smaller pan inside the deep pan full of water so the flan could cook perfectly. 
    When I think about flan I instantly think of the creamy inside and the sweet outside. I am very particular about the flan so when I look for the flan I look for all those qualities that make a flan so tasty ( In my daughters voice).  Its that time around the holidays where people start planing what they going to wear and what they going to cook in my family we all know that we need to have the flan in that situation as well as many other pastries like the temblueque and pastelillos. Flan Just like coquito has become peoples experiment and there are so many flans out there in so many flavors example, coconut, cheese, original, nutella, alcholic flan and so much more. Flan for me is a pastrie that reminds me of my family  and the holidays we shared it as a family and it was worth it. Flan brings many memories of when my grandmother used to have all her kids and grandkids under one roof and how we all spend Christmas together as one. In my families Christmas it was not only one flan but a couple of flans because we were so many and flan just brings a nice home feeling.
