 Tembleque     We Boricuas love Ajo, coconut, and Christmas, The next plate of food we will be talking about is a food that I am not a fan of but it brings many nice memories of my childhood in Puerto Rico.  Arroz con Dulce                       Arroz con dulce is one of my grandmother's most requested desserts during the holidays, I remember her making Arroz con dulce and it felt like she was making it for the whole block.  Whenever my grandmother made Arroz con dulce The whole house smelled like it, and all the people from the neighborhood had a plate of Arroz con dulce before it was even made. Flan de queso

 Flan de Queso           It one of my favorite desserts of all time, I love making desserts but this dessert is one of the hardest ones that I have tried to make. First my Sugar was not melting the way it had to melt second my mix was not coming out and the flan never cooked well. So I gave up to then find out that flan was actually cooked in what spanish people call a bano de maria.  A bano de maria is when we fill up one deep pan or container of water then we have a smaller container fill if the flan and we will place this smaller pan inside the deep pan full of water so the flan could cook perfectly.      When I think about flan I instantly think of the creamy inside and the sweet outside. Coquito Since We In the season of the festivities and so much joy, what better than a coquito, what is a Coquito? Coquito is the Spanish version of Egnot just without the Eggs.  It’s  a creamy and delicious alcoholic drink and the non-alcoholic witch is the main ingredient is coquito. Know I never actually made coquito but this is a drink that makes Christmas without this drink it would not be Christmas.    I remember watching my mom prepare these in the Christmas season and making a virgin bottle and then making  an  alcohol one for the adults there was the smell and taste of Christmas. This drink texture is basically the texture of melted coconut ice cream. See coquito is originally was made of coconut water, coconut milk sweetened condensed milk vanilla, nutmegs, and clove, and, Rum but, my mom added one more thing and that was shredded coconut. Sofrito

Sofrito    In Puerto Rico When, we marinate our chicken or pork  or prok and even add seasoning to our meat or anything that you can name. Sofrito is our base for almost anything that you can name, its added in Ground beef, chicken, pork , beans, rice etc. Its a form of seasoning that we use for our meat. The main  Ingrediants in this seasoning is, Onion, Garlic, bell pepper, culantro, recao, Ajis Dulces, Green bell peppers and finally salt and Black Peper.      Growing up we learned about sofrito and how this was one of the major ingredients in our food. When the holidays where right around the corner my mom used to tell me, you marinate your pernil 3 days before the cooking time with some sofrito and some adobo garlic and any other seasoning You would like. During the holidays the most important part of our holiday dinner is the pernil, when pernil has been allowed to sit on the seasoning for a couple days you will end up with a tasty sabory pernil....

Pollo Guisado   Growing up my mom was always up hours before we even woke up, she had breakfast done and ready to start her day I always used to admire everything she did for us and mostly as a single mother. My mom was alone in a country that she was just starting to know but she still manage to keep food on our plates and pay bills but, that did not mean we never Sean her struggle. Growing up this woman would Cook us Breakfast, Lunch, and Dinner, and know that I am a mom I look up to her even more because, I work full time and in school full-time but I also have to maintain a whole house from clean to food in the table.      When growing up My mom used to cook rice every day and we were used to it it was from yellow rice to rice with chicken, Arroz con Gandules and so many more. Thanksgiving Dinner      Every year we celebrate the holiday of thanksgiving I see it as a year to be thankful for all we lost and all we gained. This year I feel like me and my family has had so much to be grateful for. Overall we got to be thankful for our food our family and our home. When we first learn about thanksgiving we learned it as how the pilgrims made peace with the natives by offering a dinner where both could exchange traditions. Today many of us know this is not true thanksgiving Day is a day connected to numerous assassinations of the native Americans. But today many of us will go to church and be grateful to God for everything we had this past year for me and my family we are grateful for finally having our own apartment after being homeless for 2 years and going from house to house.     Thanksgiving is about the food and getting family together tonight we all feast as a family maybe dance a little bit and even  have a couple of drink...
